Beef & Bean Burrito Bowl

This is one of my favorites to make! It's easy, no wrapping involved and its packed full of veggies.

Equipment

  • Saute pan

Ingredients

BEEF MIXTURE

  • 1 1/4 Pounds Ground beef 96/4
  • 1 TBSP Dak's Taco Knight or seasoning of your choice
  • Salt & Pepper to taste
  • 1 Can Rotel Drained
  • 1 Can Pinto beans
  • 1/4 Cup Kettle & Fire Beef Bone Broth or broth of your choice
  • 1/3 Cup Cilantro Chopped
  • 6 Cups Tattooed Chef Riced Cauliflower Stir Fry or cauliflower rice of your choice

BOWL

  • 12 Cups Romaine Chopped
  • 3 Cups Cucumbers Chopped/Sliced
  • 3 Cup Tomatoes Diced
  • 1 Cup Avocado , Chopped Optional
  • 1 1/2 Cup Red onions Diced/Sliced
  • 6 TBSP Queso sauce I use Aldi brand
  • 6 TBSP Bolthouse Salsa Ranch Yogurt Dressing

GARNISH

  • Lime zest to garnish
  • Lime juice to garnish

Instructions

  • In a pan cook the beef until no more pink
  • Season with salt, pepper and taco seasoning
  • Add the drained Rotel tomatoes, mashed pinto neams and whole pinto beans
  • Pour in the beef broth and mix up
  • sprinkle in the chopped cilantro and mix until combine
  • Assemble your bowl with romaine, cauliflower rice, tomatoes, cucumbers, onions, cheese sauce & dressing
  • Garnish with some lime zest and lime juice

Skinny Taco & Rice Stuffed Acorn Squash

How adorable is this? Just in time for the fall holidays and chilly nights! Squash has to be my all time favorite vegetable. You can do so many things with it and its absolutely amazing!

I took this big acorn squash, roasted it and then stuffed it with this lightened taco & cauliflower rice mixture. The mixture is delicious on it’s own but even more amazing inside the sweet and creamy roasted acorn.

Ingredients

  • 2 Large Acorn Squash
  • Avocado oil spray Light
  • 2 tsp Ranch seasoning I used Dak's Nothin But Ranch
  • Salt & Pepper to taste
  • 1 Small Onion Chopped
  • 1 Pound Ground beef 96/4
  • 1 TBSP Taco seasoning I used Dak's Taco Knight
  • 1 Can Rotel Drained
  • 1 Can Black beans Drained & Rinsed
  • 1 1/2 Cup Plain cauliflower rice I used steam in bag
  • 1/2 Cup Cilantro Chopped fine
  • 2 oz. Cheddar cheese of your choice

Instructions

  • First set oven to 400. Cut acorn squash in half and scoop seeds out.
  • Spray cut side lightly with avocado oil and season with your choice of seasonings and salt and pepper.
  • Roast for about 30-40 minutes
  • While roasting, in a pan saut√© onions until translucent.
  • Once onions are done, add the ground beef and cook until no pink. Season with taco seasoning and salt and pepper to taste.
  • Add the rotel, black beans and cauliflower rice. Mix until hot. Add the cilantro.
  • Once acorn squash is cooked, fill with equal parts into the middle ( 4 halves )
  • Sprinkle the cheese over and place back into the oven until melted
  • Serve with your choice of toppings and enjoy

Ingredients

  • 4 Mission street tacos carb balance whole wheat tortillas
  • 2 Non fat American cheese slices Shop Rite brand
  • 28 Grams Fat free cheddar cheese Kraft brand
  • 4 oz. 96/4 ground beef 2 oz. patties each
  • 1/4 tsp Dak's Spices Steakhouse seasoning code:chefallie10 for 10% off
  • 1/4 Cup canned, frozen or fresh corn if canned, drain. If frozen, defrost
  • 1/4 tsp Dak's Street Taco seasoning
  • Salt & pepper to taste
  • 28 grams Avocado Sliced thin
  • Tomato slices seasoned with salt & pepper
  • Lettuce
  • Jalapenos canned
  • Limes to garnish
  • Cilantro to garnish

Smoky Chipotle Mayo

  • 1 TBSP Light mayo Hellman's brand
  • Smoky paprika chipotle seasoning pinch

Instructions

  • Mix the mayo and smoky chipotle paprika together. Leave in the fridge until ready to use
  • In a pan, place the corn and street taco seasoning in. Saute until charred. Set aside
  • Weigh out the burger patties, season with salt, pepper and Dak's steakhouse seasoning. Make sure your beef is at room temperature.
  • Time to make the quesadilla "buns" . Place the 4 tortillas down, and put the non fat American cheese slices down and fat free cheddar cheese. Place the other tortillas down and make your quesadilla "buns".
  • While you are making the "buns" time to make the burger patties. Once done , set aside and get all other ingredients together.
  • Assemble time. I placed one quesadilla down first, lettuce, tomato, slices jalapenos, charred corn & cilantro. Then placed the two patties down and topped with avocado, season the avocado with salt then place the other quesadilla on top that I smeared the smoky chipotle mayo on.
  • Garnish with some lime juice.
