Caulichos aka Cauliflower Nachos

I personally LOVE cauliflower and what better way to enjoy it! I love cauliflower nachos aka Caulichos.

They can be made any way you would like and with whatever toppings you would like as well. 

Nachos are also a great way to use up leftovers or anything you are trying to use up in the fridge, just throw it all on.

First off, you need to get your cauliflower. I always grab mine at Aldi, it is the cheapest. You then want to cut it up into bite size pieces.

Also, if you have a Trader Joe’s around this is a great substitute for the Dak’s Street Taco seasoning. If you do not have the Dak’s Spices Taco Knight, you can use whatever you would like to for taco seasonings. 

Next is to get it nice and roasted with a beautiful golden color.

This is the color you would like to get for the cauliflower after roasting it.

Sliced peppers, diced peppers etc. will work for this recipe.

You can use canned corn, frozen defrosted corn, leftover corn on the cobb, roasted corn etc. 

I like to use whatever beans I have on hand. Pinto, black, northern or kidney

 

 

 

You can use any cheese you would like but this is the one I choose to use due to the low calories and low WW points.

I sweat by Bolthouse dressings, they are absolutely DELICIOUS!

 

Here is how to make them:

  1. Take the cauliflower and but up into bite size pieces
  2. One done, place onto a sheet pan and then spray with avocado oil
  3. Season to taste with salt, pepper and taco seasonings
  4. Place in a 425-degree oven and roast for 30-35 minutes
  5. Once done add the toppings you would like to warm up on top of the cauliflower
  6. Bake again until warm and cheese is melted
  7. Once done, garnish with the cold toppings and dressing
  8. Enjoy

  • Sheet pan

Ingredients

  • 1 small Head of cauliflower
  • Avocado oil Spray
  • Salt to taste
  • Black pepper to taste
  • Dak's Steet Taco seasoning or seasoning of your choice
  • Dak's Taco Knight seasoning or seasoning of your choice

TOPPINGS

  • 1/4 Cup Tomatoes Sliced or diced
  • 1/4 Cup Corn fresh, canned (drained) or frozen (defrosted)
  • 1/4 Cup Peppers sliced
  • 1/4 Cup Pinto beans or beans of choice

GARNISH

  • 2 oz. Avocado Chopped
  • 1/4 Cup Red onions Diced
  • Cilantro Chopped
  • Scallions Chopped
  • 2 TBSP Bolthouse Cilantro avocado dressing

Instructions

  • Preheat oven to 425 degrees
  • Cut the cauliflower to bite size pieces and place onto a parchment lined sheet pan
  • Place the cauliflower down and spray with avocado oil
  • Season with salt and pepper to taste and season with your choice of seasonings
  • Roastt for 30-35 mintues or until tender and golden
  • Add the toppings of your choice and cheese of choice
  • Place back into oven until cheese is melted
  • Garnish with your cold garnishes and dressing
  • ENJOY!

I decided a few years ago to lighten it up because there was a lot of oil and sugar in the original recipe and that was a no go when I was on my weight loss journey,

I have made it healthier and super calorie and WW friendly.

  • 1 Large mixing bowl
  • 1 Can opener
  • 1 Knife

Ingredients

Marinade

  • 3/4 Cup Monkfruit
  • 1/2 Cup Apple cider vinegar
  • 1/4 Cup Water

Texas Caviar Mix-Ins

  • 1 15.5 oz. can Black beans Drained & rinsed
  • 1 15.5 oz. can Black eyed peas drained & rinsed
  • 1 15 oz. can No salt added corn Drained
  • 1 Cup Celery Diced
  • 1/2 Cup Fresh jalapeno Seeded & diced
  • 1 Medium Red onion diced
  • 1 Small jar pimento peppers diced
  • 1 tsp Avocado oil or a few sprays
  • Salt & pepper to taste
  • 1/3 Cup Cilantro Chopped, optional

Instructions

  • In a small sauce pan pour the marinade ingredients in
  • Heat on low heat until monk fruit is dissolved, set aside to cool
  • While the marinade is cooling prepare and place everything else into a large bowl
  • Once the marinade is cooled off, pour over the mixture, cover with saran wrap and place into the refrigerator to marinade 12-24 hours
  • After it has marinated, strain the liquid out, season with salt, pepper and add cilantro
  • Serve as is with chips, on tacos, wraps, salads etc.

  • Air fryer or oven
  • Sheet tray or air fryer sheet trays
  • Parchment paper

Ingredients

NACHO CHIPS

  • 2 Cut Da Carb flatbreads Cut into triangles
  • Cooking spray or avocado oil for chips
  • Dak's Street Taco seasoning or taco seasoning of your choice
  • Garlic salt to taste

CHICKEN

  • 1 Chicken breast Cooked or rotisserie. I used leftover Cook's Venture chicken that i seasoned with Dak's Nothin But Ranch, salt & pepper.
  • 2 TBSP Taco sauce I used Ortega

TOPPINGS

  • 1/2 Cup Pinto beans or beans of your choice, rinsed
  • 1/2 Cup Roasted red peppers in water, chopped
  • 1/2 Cup Fat free cheddar cheese
  • 1/4 Cup Banana peppers Whole or chopped
  • 2 TBSP Salsa I used Mateo's
  • 2 TBSP Nonfat Greek yogurt seasoned with ranch seasoning or taco seasoning. I used Dak's

GARNISH

  • Scallions to garnish
  • 2 Cups Romaine lettuce Shredded
  • Cilantro to garnish

Instructions

  • First cut the Cut Da Carb flatbreads into triangles
  • Place onto a sheet tray or air fryer tray
  • Spray lightly with avocado oil or cooking spray
  • Season with taco seasoning and garlic salt
  • Place into an oven at 350 or air fryer at 350 until lightly toasted (2-3 minutes) They cook fast, do not burn
  • While chips are being cooked, place chopped chicken in a bowl with the taco sauce and mix until coated. Place chicken and beans into a microwave to warm up.
  • Once chips are all cooked place onto a sheet tray lined with parchment or air fryer try lined with parchment
  • Start assembling your nachos with desired toppings that'll be hot from the air fryer or oven. So, leave off any cold desired toppings and garnish until ready.
  • Place back into the oven or air fryer until cheese is melted then garnish with lettuce, scallions, cilantro, salsda and yogurt mixture
