Beef, Bean & Cilantro Lime Cauliflower Rice Burritos

Equipment

  • Saute pan
  • Air fryer optional

Ingredients

Taco Meat

  • 1 Pound Ground beef 96/4
  • 1 TBSP Dak's Taco Knight seasoning or taco seasoning of your choice
  • Salt & Pepper to taste
  • 1/4 Cup Kettle & Fire Beef Bone Broth or beef broth of your choice
  • 1/4 Cup Fresh cilantro Chopped

Add - Ons

  • Fat free refried beans 1/4 C per burrito
  • fat free cheddar cheese 1/3 c per burrito
  • Shredded lettuce
  • Diced tomatoes or salsa Optional
  • Bolthouse salsa dressing 2 TBSP per serving

Rice

  • 1 Bag Cauliflower rice (10 - 12 oz.) Frozen steam in bag
  • 1/4 Cup Cilantro chopped fine
  • Fresh lime zest of one lime
  • Fresh lime juice Half a lime
  • Taco knight seasoning to taste
  • Salt & Pepper to taste

Tortilla/Flatbread

  • 4 Joseph lavash flatbread 1 per serving

Instructions

  • In a saut√© pan brown beef, drain if needed then place back into the pan.
  • Add the beef broth, taco seasoning, cilantro, salt and pepper to taste. Set aside
  • Microwave steam in bag cauliflower rice according to package and strain any access water.
  • Place cauliflower rice into bowl with, chopped fresh cilantro, lime zest, lime juice, taco seasoning, salt and pepper to taste
  • Place flatbread down and time to assemble
  • Smear the refried beans, cheese, beef, cauliflower rice, lettuce, salsa then dressing.
  • Roll up and enjoy
  • For an extra outer crunch spray burrito once rolled and place into air fryer for a few minutes until crisp on the outside.

Ingredients

  • Avocado oil for coating pan
  • 1 1/4 Pounds Ground beef 96/4
  • 1 1/2 Cups Onions Chopped
  • 1 Cup Carrots Chopped, roughly
  • 1 Cup Celery Chopped
  • 1 TBSP Garlic minced
  • 24 oz. Tomato sauce, no salt
  • 32 oz. Fat free chicken broth
  • 15 oz. Diced tomatoes , no salt
  • 2 tsp Sugar
  • 2 tsp Dried basil
  • 1 tsp Dried oregano
  • 1 tsp Dried thyme
  • 1 tsp Italian blend
  • 1 Cup Barilla Ditalini pasta Dry
  • 1 Can Dark kidney beans ( 15 oz. ) drained and rinsed
  • 1 Can Northern beans ( 15 oz. ) drained and rinsed
  • 1/2 Cup Parsley chopped
  • Salt & Pepper to taste
  • Parmesan cheese to garnish

Instructions

  • In a dutch oven coat lightly with avocado oil and brown beef
  • Once beef is browned, set aside
  • Add onions, carrots and celery to the pan until tender . If using a crockpot brown beef in separate pan then the onions, carrots and celery then place into the crockpot.
  • Once vegetables are tender add the chicken broth, tomato sauce, diced tomatoes, sugar, basil, oregano, thyme and Italian seasoning. Blend.
  • Add the beef back into the pot
  • Add the dry pasta and bring to a boil then simmer for about 15 minutes or until pasta is cooked.
  • Add beans, parsley and then season with salt and pepper to taste.
  • Garnish with parmesan cheese and enjoy

Ingredients

  • 4 Mission street tacos carb balance whole wheat tortillas
  • 2 Non fat American cheese slices Shop Rite brand
  • 28 Grams Fat free cheddar cheese Kraft brand
  • 4 oz. 96/4 ground beef 2 oz. patties each
  • 1/4 tsp Dak's Spices Steakhouse seasoning code:chefallie10 for 10% off
  • 1/4 Cup canned, frozen or fresh corn if canned, drain. If frozen, defrost
  • 1/4 tsp Dak's Street Taco seasoning
  • Salt & pepper to taste
  • 28 grams Avocado Sliced thin
  • Tomato slices seasoned with salt & pepper
  • Lettuce
  • Jalapenos canned
  • Limes to garnish
  • Cilantro to garnish

Smoky Chipotle Mayo

  • 1 TBSP Light mayo Hellman's brand
  • Smoky paprika chipotle seasoning pinch

Instructions

  • Mix the mayo and smoky chipotle paprika together. Leave in the fridge until ready to use
  • In a pan, place the corn and street taco seasoning in. Saute until charred. Set aside
  • Weigh out the burger patties, season with salt, pepper and Dak's steakhouse seasoning. Make sure your beef is at room temperature.
  • Time to make the quesadilla "buns" . Place the 4 tortillas down, and put the non fat American cheese slices down and fat free cheddar cheese. Place the other tortillas down and make your quesadilla "buns".
  • While you are making the "buns" time to make the burger patties. Once done , set aside and get all other ingredients together.
  • Assemble time. I placed one quesadilla down first, lettuce, tomato, slices jalapenos, charred corn & cilantro. Then placed the two patties down and topped with avocado, season the avocado with salt then place the other quesadilla on top that I smeared the smoky chipotle mayo on.
  • Garnish with some lime juice.
