One Pan Chicken Pot Pie

This meal was something that was randomly made with what we had on hand in the fridge, freezer and pantry. It came out amazing and it was extremely easy to make and all kids approved!

This was also a one pan meal that is always great because less dishes means less time cleaning in the kitchen and that is ok in my book.

One Pan Chicken Pot Pie

  • Casserole dish


  • 3 Chicken breasts or Rotisserie chicken About 3 cups cooked
  • 2 Cups Carrots Chopped or sliced thin
  • 1 Cup Onions Chopped
  • 1 Cup Celery & celery Chopped
  • 2 TBSP Light butter
  • 1 TBSP Avocado oil
  • 2 TBSP Fresh garlic minced
  • 2 Cans Cream of chicken soup small cans
  • 2 Cups fat free chicken stock
  • 1 Cup Unsweetened almond milk
  • 1 Bag Frozen peas
  • 2 TBSP Fresh thyme
  • Dak's Nothin But Ranch seasoning
  • Salt and pepper to taste
  • 1 Can Crescent rolls reduced fat


  • Cook chicken and set aside or use rotisserie chicken. About 3 cups worth of cooked chicken.

  • Add the carrots and cook until tender. Add the celery and onions and cook until translucent.
  • Once everything is tender add the garlic and cook until fragrant.
  • Add the cans of cream of chicken soup, chicken stock and almond milk. Bring to a simmer
  • Add the seasonings and season to taste.
  • Add the chicken and frozen peas. Bring up to temperature and cut the heat.
  • Place the crescent rolls on top of the pie and cook according to the package or until the crescent rolls are golden brown and the pie is bubbling on the sides
  • Take out, let cool before serving and enjoy.
