Beef & Bean Burrito Bowl
This is one of my favorites to make! It's easy, no wrapping involved and its packed full of veggies.
Servings: 6
Equipment
- Saute pan
- Can opener
- Strainer
Ingredients
BEEF MIXTURE
- 1 1/4 Pounds Ground beef 96/4
- 1 TBSP Dak's Taco Knight or seasoning of your choice
- Salt & Pepper to taste
- 1 Can Rotel Drained
- 1 Can Pinto beans
- 1/4 Cup Kettle & Fire Beef Bone Broth or broth of your choice
- 1/3 Cup Cilantro Chopped
- 6 Cups Tattooed Chef Riced Cauliflower Stir Fry or cauliflower rice of your choice
BOWL
- 12 Cups Romaine Chopped
- 3 Cups Cucumbers Chopped/Sliced
- 3 Cup Tomatoes Diced
- 1 Cup Avocado , Chopped Optional
- 1 1/2 Cup Red onions Diced/Sliced
- 6 TBSP Queso sauce I use Aldi brand
- 6 TBSP Bolthouse Salsa Ranch Yogurt Dressing
GARNISH
- Lime zest to garnish
- Lime juice to garnish
Instructions
- In a pan cook the beef until no more pink
- Season with salt, pepper and taco seasoning
- Add the drained Rotel tomatoes, mashed pinto neams and whole pinto beans
- Pour in the beef broth and mix up
- sprinkle in the chopped cilantro and mix until combine
- Assemble your bowl with romaine, cauliflower rice, tomatoes, cucumbers, onions, cheese sauce & dressing
- Garnish with some lime zest and lime juice
