Fresh Tomato, Mozzarella & Ricotta Pizza Pie

My Fresh Tomato, Mozzarella & Ricotta Pizza Pie has the traditional pizza toppings but with a healthier twist and without losing the flavor and quality. 

When it comes to food photography, sometimes I decide to take my food out to our front porch for the perfect natural lighting. As you can see in the video below of my pizza, I am outside. 

 

 

 

 

My Bizzy Kitchen Skinny Pizza Dough has become a MASSIVE staple in this household for over two years now. 

I recently found this amazing marinara at Costco and it is amazing. You can have 1/2 a cup serving for only 40 calories and 1 WW personal point. I highly recommend it. 

What you will need:

  • Stand mixer or mixing bowl
  • One batch of My Bizzy Kitchen Skinny Pizza Dough 
  • Cast iron pan (10″-12″) or sheet pan with parchment
  • Mini pizza dough roller
  • Marinara sauce
  • Fresh mozzarella
  • Ricotta cheese
  • Tomato slices
  • Dried oregano
  • Dak’s Italian Blast (Code:Chefallie10 for 10% off at Dak’s Spices) or Italian seasoning
  • Garlic
  • Onion powder
  • Avocado oil spray
  • EVOO (extra virgin olive oil)
  • Garlic salt
  • Fresh basil
  • Grated parmesan chesse
  • Red pepper flakes (optional)

The ricotta I got is from Aldi, one of my favorite stores and you can have 1/4 cup (goes a long way) for 90 caloires, 4 WW and has 6g of protein. Aldi has great food for awesome prices. 

Here is the fresh mozzarella I got once again, from Aldi. I like this one because the mozzarella is pre sliced for convenience. Two slices of this brand are 70 calories, 3 WW and 5g protein.

One of my absolute favorite kitchen tools is this oil sprayer I purchased from QVC years ago and it is the best. I fill it up with my avocado oil and it has zero aerosol. 

Here is my ride or die spices from Dak’s Spices. I have been working with them for years and are basically family! They have such amazing spiced, family owned. I love using the Italian Blast seasoning on any Italian dishes and especially pizzas. 

When it comes to amazing EVOO (Extra Virgin Olive Oil) this was so delicious and how beautiful is the bottle?? Garcia Dela Cruz was perfect for my pizza garnish. 

Also, when it comes to easy pizza making, you need to invest in one of these cute little pizza dough rollers.

 

 

How to make it:

  1. First, you’ll need to prepare the Skinny Pizza Dough
  2. Portion into the desired amount. I use my digital food scale. 
  3. Preheat the oven to 425 degrees
  4. Spray the cast iron pan lightly with avocado oil
  5. Roll the dough directly into the cast iron pan using the small pizza roller
  6. Spread the marinara sauce all over the dough followed by the garlic and the seasonings
  7. Place the tomato slices around the pie leaving room for the cheeses
  8. Place the cheese around, between and on top of the tomatoes
  9. Spray the crust lightly with avocado oil and sprinkle the garlic salt all around the crust
  10. Bake at 425 for 12-15 minutes or until golden brown
  11. Garnish with fresh basil, olive oil, some freshly grated parmesan cheese & red pepper flakes

  • Stand mixer or bowl
  • Cast Iron pan or pizza stone
  • Pizza dough roller linked in notes
  • Oven or pizza oven

Ingredients

  • 12 oz Skinny Pizza Dough Recipe linked in notes

Toppings/Seasonings

  • Avocado oil spray to coat cast iron pan
  • 1/2 Cup Kirkland Signature Organic Marinara from Tuscany or marinara of your choice
  • 2 tsp Garlic minced
  • 1/4 tsp Dak's Italian Blast Discount code in notes
  • 1/4 tsp Dried oregano
  • 1/4 tsp Onion powder
  • 6 Tomato Slices
  • 2 oz Fresh mozzarella I used sliced from Aldi
  • 1/4 Cup Happy Farms part skim ricotta cheese
  • Avocado oil spray
  • 1/4 tsp Garlic salt

Garnish

  • 2 tsp Garcia Dela Cruz organic extra virgin olive oil Optional, drizzle
  • Fresh basil torn
  • 1 TBSP Grated parmesan to garnish
  • Red pepper flakes to garnish, optional

Instructions

  • Preheat the oven to 425 degrees
  • Portion out your desired amount of Skinny Pizza Dough. I used 12 ounces for two servings into a 10" cast iron pan.
    * I PLACE MY DOUGH ONCE PREPARED INTO MY MICROWAVE COVERED FOR A FEW HOURS TO PROOF*
  • Spray the cast iron lightly with some avocado oil
  • Roll the dough out into the cast iron skillet
  • Once the dough is rolled out, put the marinara down
  • Sprinkle the minced garlic over the sauce
  • Take all the seasonings (besides the garlic salt) and sprinkle all over the sauce
  • Add the tomato slices with space between
  • Place the mozzarella and ricotta in between and around the tomato slices
  • Spray the exposed crust lightly with avocado oil and sprinkle the garlic salt all around the crust
  • Place the pizza into the oven for about 15 minutes or until crust is golden brown
  • Garnish with fresh basil, olive oil, grated parmesan cheese and red pepper flakes
