Peach season is here, and I am all for it. We got these beautiful peaches from a local farm called Tara Farms out in Litchfield, CT. The owner of this farm is coworkers with my husband and is so generous to bring us some amazing produce.
The picture on the left is using New York bakery bread made from scratch and the picture on the right I used my favorite low carb bagels from Royo Bread. So, you can make this decadent with artisan bread or more carb friendly but still amazing.
Here is what you will need:
- Fresh peaches
- Avocado oil spray
- Cinnamon
- Salt
- Part skim ricotta
- Vanilla bean paste or extact
- Peach jam
- Artisan bread, low carb bagels or bread of choice
- Fresh basil
- Honey
Look how beautiful and big these peaches are from Tara Farms. When I sliced them open and tried them, I was blown away at the flavor. You honestly need to but from a farm rather than a store. The quality is insanely better.
I chose to use part skim ricotta cheese for less calories. I just jazzed it up for extra flavoring.
This isn’t necessary, but this Stonewall Kitchen Peach Jam took the flavor over the top. I was lucky enough to find this at Costco and I’m glad I decided to purchase it, because it’s delicious and only 30 calories per tablespoon.
My friends over at Pure Raw Honey make the most AMAZING honey and other honey products. This is a perfect garnish for this recipe.
Here is how to make it:
- Slice the peach in half, remove the pit and slice into slices.
- Spray a small sauce pan with avocado oil and add the peach slices into the pan
- Saute for just a few minutes and season peaches with a pinch of salt and cinnamon
- Remove peaches and set aside ones they are warmed up and slightly browned.
- While the peaches are cooling off, combine the ricotta cheese, vanilla, salt and peach jam
- Smear the ricotta evenly between the two slices of bread of bagel halves
- Top the toast or bagel halves with the peaches
- Garnish with a pinch of salt, honey and fresh basil
- Enjoy this amazing meal

Ingredients
- Artisan bread/Low carb bagels or bread of choice
PEACHES
- 1 Peach sliced
- Avocado oil spray
- Pinch of cinnamon
- Pinch of salt
RICOTTA SPREAD
- 1/4 Cup Part skim ricotta
- Vanilla bean paste or extract
- 1 tsp Peach jam
- Pinch of salt
GARNISH
- Honey
- Fresh basil
- Pinch of salt
Instructions
- Slice the peach in half and remove the pit
- Slice the peaches and place into a lightly greased saute pan
- Saute for a few minutes
- Season with a pinch of salt and cinnamon
- Removed from heat
- In a small bowl combine the ricotta spread ingredients
- Place the ricotta spread onto your toast or bagel
- Add the sauteed peached
- Garnish with a pinch of salt, honey and fresh basil
- Enjoy this summer treat!
