Buffalo Chicken Pinwheels

Here is a quick, easy and delicious recipe I made during my busy days as a stay-at-home mom/ food blogger. 

My days here are so busy and I just need something easy and filling so this one was created. 

Here is what you will need:

  • Cooked chicken breast
  • Celery
  • Fat free cheddar cheese
  • Light laughing cow wedge
  • Non-fat Greek yogurt
  • Ranch seasoning
  • Dak’s Butt Kickin Buffalo seasoning
  • Hot sauce
  • Salt
  • Pepper
  • Low carb tortilla


You can use rotisserie chicken, canned chicken, chicken in a packet or fresh cooked chicken shredded.

This is the cheese that I use, and it is low in calories

Light laughing cow wedges are the best alternative to cream cheese

There are many different low carb tortillas on the market, these are my favorite. 


Here is how to make it:

  1. Preheat the air fryer to 400 degrees
  2. In a bowl combine the chicken, celery, cheeses, hot sauce and seasonings
  3. Mix until combine and place over the tortilla
  4. Roll up the tortilla and cut into 6 pieces
  5. Place the pieces open sides up into the air fryer for 5 minutes or so
  6. Enjoy with my easy yogurt dipping sauce or sauce of your liking

  • Air fryer



  • 3 oz. Cooked chicken diced fine
  • 1/4 Cup Celery diced fine
  • 1/2 Cup fat free cheddar cheese
  • 1 Light laughing cow wedge
  • 1 TBSP Non-fat Greek yogurt
  • 1/4 tsp Dak's Butt Kickin Buffalo seasoning
  • 2 tsp Hidden Valley ranch seasoning
  • 1-2 TBSP Frank's Red Hot sauce
  • Salt & Pepper to taste


  • 1 Mission Carb Balance tortilla or tortilla of your choice


  • 1/3 Cup Non- Fat Greek yougurt
  • 1 tsp Hidden Valley ranch seasoning


  • Preheat air fryer to 400 degrees
  • In a small bowl combine all of the chicken mixture until combine
  • Place the chicken mixture all over the tortilla and roll up
  • Slice into 6 portions
  • Place into an air fryer for about 5 minutes
  • Serve with your choice of dipping sauce and side
