Mediterranean Tuna Salad
I LOVE tuna in a can, especially the brand Wild Planet.
This was a recipe that came together with random ingredients in my fridge that needed to be used up and came out GREAT!
The ENTIRE recipe is 3 WW but if you served it for 2 people it would be 2 WW. Weird WW math, am I right? Only 246 calories per serving. This makes great for a meal prep option as well.
Here is what you will need:
- Tuna, I prefer Wild Planet brand
- Grape tomatoes
- Mini cucumbers
- Red onion
- Artichoke hearts (in water)
- Lemons
- Fat free feta cheese
- Italian seasoning
- Bolthouse Italian dressing, or dressing of choice
- Fresh parsley
- Salt
- Pepper
Wild Planet tuna is by far the superior brand of tuna. It tastes amazing and it has a PERFECT color.
I usually have these veggies on hand all the time so these were a great way to use them up.
Onions and artichokes in a jar are also other items I like to have on hand at all times as well.
Lemons make a great dressing for fish and especially tuna salads. I found this Italian dressing at Big Y grocery store and had to grab it to try out.
The best fat free feta cheese that I usually purchase at Shop Rite stores.
If you do not like parsley, you can leave it out or use dried parsley.
Salt, pepper and Italian seasoning are more items that I ALWAYS have on hand in my house.
Here is how to make it:
- In a bowl, add the canned tuna. If using Wild Plant brand there is NO NEED to drain the can.
- Add the remaining ingredients
- Mix until combine
- Season to taste with salt and pepper
