Ingredients

CROCKPOT CHICKEN INGREDIENTS

  • 2 Pounds Fresh or frozen chicken breast
  • 1 Cup Mateo's Salsa or salsa of your choice
  • 1 1/2 Cups Fresh, frozen or canned pineapple chunks If frozen or canned, make sure no sugar is adder or in syrup
  • 1 TBSP Dak's Taco Knight seasoning or taco seasoning of your choice
  • Salt & Pepper to taste
  • 1/2 tsp Dak's Nothin But Ranch seasoning or ranch seasoning of your choice

GARNISH

  • 1-2 tsp Fresh lime juice
  • 1/3 Cup Cilantro, chopped optional

Instructions

  • In a crockpot place the chicken onto the bottom
  • Add the taco seasoning, making sure to cover the chicken
  • Pour the salsa on top of the chicken followed by the pineapple chunks
  • Season to taste with salt and pepper
  • Add the ranch seasoning and set crockpot on low for 6 hours
  • Once all done, keep the chicken as is or shred and enjoy any way you would like

Ingredients

  • 4 each Chicken breast ( Fresh or frozen ) About 2 pounds
  • 1 tsp Avocado oil Spray
  • Salt & Pepper to taste
  • 1 Packet Hidden Valley Ranch Mix
  • 1 TBSP Dak's Nothin But Ranch Optional
  • 1/2 Cup Frank's hot sauce or hot sauce of your choice
  • 1/2 Cup Kettle & Fire Bone Broth Or broth of your choice
  • 1/2 Cup Onion Diced
  • 1/2 Cup Celery Diced
  • 14.5 oz Tuttoroso canned no salt added diced tomatoes Undrained
  • 1/2 Cup Bolthouse Farms Chunky Blue Cheese Yogurt Dressing or blue cheese of your choice
  • 1/2 Cup Philadelphia whipped cream cheese
  • 1 Cup Kraft fat free cheddar cheese
  • 1 Cup Kraft fat free mozzarella cheese
  • Scallions to garnish
  • 1 Box Ronzoni 150 Penne

Instructions

  • In a crockpot place chicken breast down on the bottom. Spray lightly with avocado oil, season with salt, pepper & both ranch seasonings
  • Pour the hot sauce over the chicken then chicken broth on the bottom of the crockpot
  • Add the celery, onion and diced tomato
  • Pour blue cheese dressing over and set to low for 6-8 hours.
  • Once chicken is fully cooked and ready to go, shred to your liking.
  • Cook pasta then add to the chicken
  • Add cheese and fold in then cover on low for 15 minutes until cheese is melted
  • Once cheese is melted, garnish with more hot sauce and scallions

I also have always enjoyed Broccoli and Cheese soup but didn’t like how rich some were or how much cheese some places added and also some of them were so rich you could only have a few spoonful’s.

Not mine, you can enjoy a generous portion without the guilt and without needed a massive glass of water to calm down how rich it is.

Ingredients

  • 4 Cups Cooked Broccoli I used steam in bags
  • 1 tsp Avocado oil
  • 2 TBSP Light butter I use I Can't Believe It's Not Butter
  • 1 Small Onion Diced fine
  • 1/2 Cup Celery Dinced fine
  • 2 Cups Shredded carrots
  • 1 TBSP Garlic Minced
  • 1/3 Cup Flour
  • 2 Cups Fat free chicken broth
  • 2 Cups Unsweetened almond milk
  • 1 tsp Knorr chicken bouillion
  • 1/2 tsp Ground mustard
  • 1/2 tsp Paprika
  • 2 tsp Dak's Nothin But Ranch seasoning
  • 4 Non fat american cheese slices Borden cheese brand
  • 1 Cup Fat free cheddar cheese
  • 2 oz. Neufchatel cream cheese
  • Salt & Pepper to taste

Instructions

  • First cook your broccoli and set aside. I use steam in bag broccoli out of convenience but you can use fresh.
  • In a large pot ( I use a dutch oven ) place the avocado oil and light butter in. Once melted sauté the onions, celery and carrots until tender.
  • Once veggies are tender add garlic and cook for about 30 seconds.
  • Take the flour and sprinkle all over making sure to coat. Sauté just for about one minute.
  • Add the chicken broth and the almond milk. Stir until combined.
  • Add the minced garlic and seasonings.
  • Once broccoli has cooled off take 3 out of the 4 cups and chop up fine and add into soup.
  • Season with salt and pepper to taste
  • Add the cheeses and bring to a boil then simmer immediately.
  • Take the remaining broccoli and give it a good rough chop and add in.
  • Season again with salt and pepper to taste and serve!
