The ULTIMATE comfort food and one of the most EASIEST crockpot meals I have ever made!

Halloween with 3 kids tend to get kind of hectic so I wanted something easy that I could just throw together in the morning and enjoy later that night before we all got ready to head out.

This meal was such a hit that my older sister Kait wanted the ingredients list and the recipe right away. She wanted to make it again and let me tell you that when there is ZERO leftovers that means you did great!

This meal could also be an east alternative to Thanksgiving or just a weekend or weekday meal to enjoy with VERY little effort involved!

Crockpot Chicken & Stuffing

Ingredients

  • 5 Large Chicken breasts I used frozen
  • 2 TBSP I Can't Believe It's Not Butter The Light One
  • 1 tsp Dak's Nothin But Ranch Optional
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Ground Sage
  • Salt & Pepper to taste
  • 1 18 oz. Heinz Home Style Gravy Classic chicken
  • 1/4 Cup Unsweetened almond milk
  • 1 tsp Thyme leaves Dried
  • 1 Can Corn no salt Drained
  • 1 Can Cut green beans Drained
  • 1 6 oz. Stove Top Chicken Stuffing
  • 1 1/2 Cup Fat free chicken broth

Instructions

  • In a crockpot place the frozen chicken and or defrosted chicken breasts down
  • Take the light butter and smear all over the top of the chicken breasts
  • Sprinkle the garlic powder, onion powder , dried ground sage and salt and pepper over the chicken breasts
  • In a separate bowl pour the chicken gravy in and the unsweetened almond milk mix up and pour over the chicken
  • Sprinkle the dried thyme leaves over the gravy
  • Drain the green beans and corn and pour directly over the gravy
  • In a separate bowl pour the stuffing and the chicken broth in and mix
  • Pour the stuffing over the veggies making sure its all covered up
  • Cover the crockpot and set to low for 8 hours
  • Once done serve and enjoy!

Ingredients

  • 1 tsp Avocado oil
  • 1 1/2 Cup Onion Diced
  • 1 Cup Celery Diced
  • 2 Cup Carrots Diced
  • 1/2 TBSP Garlic minced
  • 1 TBSP Paprika
  • 1/2 TBSP Chili powder
  • 1 tsp Cumin
  • 1 tsp Fresh black pepper
  • 1 tsp Cracked red pepper flakes
  • 1 tsp Coriander
  • 1 1/2 Pounds Perdue lean ground turkey 98% fat free
  • 1 Can Libby's pure pumpkin puree
  • 1 TBSP Fresh rosemary chopped
  • 1 TBSP Fresh tyme chopped
  • 1 TBSP Fresh sage chopped
  • 2 Cups Fat free chicken broth
  • 2 Cans White beans drained and rinsed
  • Salt and pepper to taste
  • 1 tsp Dak's Nothin But Ranch Optional but recommend

Instructions

  • In a dutch oven or sauté pan, sauté celery, carrots and onions until tender. If using a crockpot or instant pot sauté then transfer to crockpot or instant pot. If using the dutch oven continue steps.
  • After celery , carrots and onions are tender add the garlic. Sauté for about one minute.
  • Add the seasonings ( Paprika, Chili powder, cumin, coriander , red pepper flakes and black pepper ). Mix up and cook for about another minute.
  • Add the pure pumpkin puree, mix then add the fresh herbs ( Rosemary, thyme and sage )
  • Pour chicken broth in then the white beans. Mix up and bring to a boil for about 5 minutes.
  • Cover and simmer for about 20 minutes
  • Season with Dak's Nothin But Ranch and season with salt and pepper to taste
  • Serve and enjoy!

Ingredients

  • 2 Pounds trimmed beef eye round or roast Cut into 2 inch chunks
  • Salt & Pepper
  • 3 Cups Sliced mushrooms
  • 2 Cups Sliced onions
  • 2 tsp Steakhouse seasoning ( I use Dak's spices , linked in notes )
  • 2 tsp Ranch seasoning ( I use Dak's Spices, linked in notes )
  • 2 tsp Dried dill
  • 1 TBSP Dried thyme
  • 2 tsp Garlic powder
  • 3 Cups Unsalted beef broth
  • 3 TBSP Dijon mustard
  • 2 tsp Worcestershire sauce
  • 1/2 Cup Light sour cream
  • 1/2 Cup Whipped cream cheese
  • 2 TBSP Cornstarch
  • 1/4 Cup Water
  • 1 12 oz. Light & fluffy egg noodles
  • 2 TBSP Grated parmesan
  • Salt & Pepper to taste
  • Parsley or scallions to garnish

Instructions

  • Before throwing everything into the crockpot ( Which you can ) i took my beef out and let it come to room temperature. I then seasoned with salt and peper and in a hot cast iron skillet seared the beef to seal in those juices.
  • Place into the crockpot once all are seared ( Do not cook all the way through )
  • Add the mushrooms, onions, all seasonings, broth, mustard and worcestershire sauce
  • Mix up and set crockpot on low for 6-8 hours or until beef is tender
  • Add sour cream and cream cheese in a little at a time, stiring after each time. This will help so that the dairy doesnt break.
  • Mix up the cornstarch and water to make a slurry. This helps thicken the sauce. Pour into the crockpot, mix up and place on high for 10 minutes.
  • While that is on high, get your pasta ready. Cook to al dente then add into the crockpot.
  • If the sauce is too thick you can add some more water.
  • Add the parmesan cheese, mix up, serve and garnish with some parsley or scallions
