Creamy Tomato Basil Chicken 

This was an AMAZING dish, family friendly and super easy to make. 

It is 2 WW points and only 319 Calories per serving. 

The recipe serves 4 and about 1 HEAPING cup per serving. I like to serve over spaghetti squash and a veggie. 

 

Here is what you need:

  • Crockpot or Instant pot
  • Canned diced tomato (no salt)
  • Marinara sauce (I use Aldi brand)
  • 2% low fat evaporated milk
  • Cornstarch
  • Minced garlic
  • Dried basil
  • Italian seasoning
  • Chicken breast (fresh or frozen)
  • Fresh basil (to garnish)

Here are the diced tomatoes and marinara I used. I love the Aldi marinara, and I usually do not count the WW points for this. The ingredients are simple. 

Did you know that evaporated milk is pretty low in calories and WW points? Well is it.

 

Seasonings I always have on hand especially for many recipes I make.

Always season to taste. 

You can you fresh or frozen chicken for this recipe as well.

Here is how you make it:

  1. In the crockpot add the diced tomatoes and marinara
  2. Combine the cornstarch and evaporated milk and pour into the crockpot.
  3. Add the minced garlic, dried basil, dried thyme, salt and pepper.
  4. Add the chicken, cover with the sauce.
  5. Season the chicken again with salt, pepper and Italian seasoning. 
  6. Cook on low for 6-8 hours.
  7. Once done, chunk up or shred the chicken.
  8. Serve over pasta or with your choice of veggies or salad.

Ingredients

  • 14.5 ounce Canned diced tomatoes (no salt)
  • 3/4 Cup Aldi marinara or brand of choice
  • 3/4 Cup 2% low fat evaporated milk
  • 2 TBSP Cornstarch
  • 1 1/2 TBSP Minced garlic
  • 2 tsp Dried basil
  • 1 TBSP Italian seasoning
  • 1 1/2 Pounds Chicken breast Fresh or frozen

Instructions

  • In a crockpot add the diced tomatoes and marinara.
  • Combine the evaporated milk and cornstarch together and pour in the crockpot.
  • Add the minced garlic, dried basil, dried thyme, salt and pepper.
  • Add the chicken, cover with the sauce.
  • Season the chicken again with salt, pepper and Italian seasoning.
  • Cook on low for 6-8 hours.
  • Once done, chunk up or shred the chicken.
  • Serve over pasta or with your choice of veggie or salad.
