Crockpot Chicken Enchiladas

These were better than the restaurants! I even said that out loud to my husband while we were enjoying them,

Let the chicken sit and cook in the crockpot all day and a quick and easy roll up to the oven and dinner is done.

These will definitely be on repeat for meal prep and taco Tuesday’s.

 

Here is what you will need:

  • Crockpot
  • Chicken breast (Fresh or frozen)
  • Avocado oil (I use the spray kind)
  • Salt
  • Pepper
  • Dak’s Original Red (Or seasoning of choice). Paprika works
  • Dak’s Taco Knight seasoning or taco seasoning of your choice
  • Cumin
  • Rotel tomatoes in a can
  • Limes
  • Canned fat free refried 
  • Fat free cheddar cheese or cheese of your choice
  • Low carb tortillas or tortillas of your choice
  • Enchilada sauce
  • Cilantro

I use the Aldi brand a lot, but this brand is well known so that is why I wanted to show this one for reference. 

These are amazing and SUPER low in calories. Only 50 calories per tortilla

I love refried beans and I love fat free refried beans even more. This brand is the lowest calorie brand I’ve found.

I get a lot of people stating that fat free cheese never melts but if you put it into something covered it DEFINITELY melts and is SUPER low in calories and points

Red enchilada sauce is delicious and also low in calories as well. Make the enchiladas PERFECT and what they are meant to be.

 

 

How to make it:

  1. In the crockpot place the chicken
  2. Spray the chicken lightly with avocado oil spray
  3. Season the chicken with salt and pepper to taste
  4. Sprinkle the taco seasoning, cumin and Dak’s Original Red seasoning all over the chicken breast
  5. Take the can of Rotel and drain just a little juice out then pour over and around the chicken
  6. Put the lid on and set the crockpot to 6 hours if chicken is frozen and 4 hours if not frozen
  7. Once done, shred the chicken to your liking 
  8. Add some lime zest and lime juice
  9. Add a bunch of cilantro
  10. Set the oven to 375 degrees
  11. Get a casserole dish big enough to fit 6- 8 tortillas rolled up 
  12. Pour 1/4 of the sauce onto the bottom of the casserole dish
  13. Take 2 TBSP of the refried beans and smear that on each of the tortillas (2 TBSP each)
  14. Take 2.5 ounces of the chicken mixture and place on each of the tortillas
  15. Sprinkle about 1 TBSP of the cheese into the tortillas each then roll up and place into the casserole dish
  16. Take the remainder of the enchilada sauce and pour over the tortillas
  17. Take the remaining cheese and sprinkle on top of the tortillas
  18. Put some foil over the top of the casserole dish and back for about 20-30 minutes
  19. Uncover the casserole dish and place back into the over if you’d like a crisper top for about 15 minutes or broil for a few minutes

Ingredients

CROCKPOT CHICKEN

  • 1 pound Chicken breast frehs or frozen

  • 1/2 TBSP Dak's Taco Knight seasoning or taco seasoning of choice
  • Trader Joe's elote seasoning or seasoning of choice
  • 1 tsp Cumin
  • 1/2 tsp Chili powder
  • 1 14.5 oz Rotel tomatoes with green chiles Slightly drained
  • Lime zest of one lime
  • Lime juice of one lime
  • 1/2 Cup Cilantro Chopped

ENCHILADA COMPONENTS

  • 8 Ole Xtreme wellness high fiber tortillas or tortillas of your choice
  • 1 Can Old el paso fat free refriend beans
  • 3/4 Cup Kraft fat free cheddar cheese or cheese of your choice
  • 1 10 oz Red enchilada sauce

OPTIONAL TOPPINGS

  • Iceberg lettuce Shredded
  • Light sour cream or nonfat Greek yogurt
  • Cilantro to garnish
  • Lime wedges to garnish

Instructions

  • In the crockpot place the chicken
  • Spray the chicken lightly with avocado oil spray
  • Season the chicken with salt and pepper to taste
  • Sprinkle the taco seasoning, cumin and Dak's Original Red seasoning * elote seasoning all over the chicken breast
  • Take the can of Rotel and drain just a little juice out then pour over and around the chicken
  • Put the lid on and set the crockpot to 6 hours if chicken is frozen and 4 hours if not frozen
  • Once done, shred the chicken to your likingย Add some lime zest and lime juice
  • Add in the chopped cilantro
  • Set the oven to 375 degrees
