As a Cheesy Gordita Crunch lover myself, I know that these are the closest real deal copycat! Prior WW & Healthi I would eat 2-3 of these without a care, when pregnant 3-4. They are my FAVORITE!! Me and my husband have been trying to master this recipe & the Baja sauce and gosh darn it, GO ME!!!!

Cheesy Gordita Crunch with Homemade Baja Sauce
Equipment
- Cast iron
- Sheet pan
- Pizza dough roller linked in notes
Ingredients
- 16 oz My Bizzy Kitchen Skinny Pizza Dough Recipe linked in notes
- Avocado oil spray
BEEF
- 1 Pound Lean 96/4 Ground Beef
- 1 TBSP Dak's Taco Knight or taco seasoning of your choice
- Salt & Pepper to taste
FIXINS
- 8 Corn tortillas I used Aldi brand
- 2 Cups Fat free cheddar cheese
- 4 TBSP My Baja Sauce recipe linked in notes
- 2 Cups Lettuce Shredded
- 1/4 Cup Taco sauce I used Taco Bell brand, to garnish (optional)
Instructions
- Cook your taco meat according to your liking with the Dak's, Salt and pepper (to taste) and set aside.
- Prepare the skinny pizza dough. Portion the dough into 2 oz. balls (8 portions total).
- Get a cast iron hot on the stove with a light coating of avocado oil and then roll out dough into a nice circle.
- Once skillet is hot, lay dough down and just cook until lightly brown on both sides and still soft. Place to the side until ready
- Take each flat bread and sprinkle 1/4 cup fat free cheese down, then the corn tortilla. Wrap up in foil and warm in oven to melt cheese.
- Once melted & warm, fill with 2 oz. of taco meat in each, then add the Baja sauce, taco sauce & shredded lettuce.
