These were a throw together recipe. I had no clue what was going to be for dinner this night. I opened my fridge found some leftover ground beef, an opened can of refried beans, half an onion and a few other ingredients that I always have on hand. Through it all together and this will be a recipe on repeat.
Taco Tuesday is one of my favorite days of the week. I could literally eat tacos daily. I loved this easy recipe, and it came together in no time.

Here is what you will need:
- Air fryer or oven
- Onion
- Ground beef
- Taco seasonings
- Salt
- Pepper
- fat free refried beans
- Mission ultra thin yellow corn tortillas
- Lettuce
- Cucumbers
- Tomatoes
- Bolthouse cilantro avocado yogurt dressing
- Non fat Greek yogurt

Nothing special about these diced onions. Just make sure they are to your liking when it comes to the size of the dice.
Lean ground beef is great to use when you need a leaner option. It definitely needs seasoning but when it’s made correctly it is no different than any other beef.

This is a great seasoning that is at Trader Joe’s it gives am amazing flavor to any kind of taco dish. It is inexpensive and the flavor is wonderful.

These Mission brand ultra thin corn tortillas are the best. They are lower in calories and WW points plus they are a better option for making homemade tortilla chips as well.
You can use any kind of fat free refried beans; I get mine from Aldi.
Here is how to make them:
- In a sauté pan first sauté the onions until translucent
- Add the ground beef
- Season the beef and cook until brown
- Add the beef broth as needed to keep it from burning and to add moisture back into the ground beef
- Add the refried beans and more broth if needed
- Set the air fryer to 420 degrees
- Take the ultra-thin corn tortillas and distribute the beef mixture evenly on one side of the tortillas
- Sprinkle an even amount of cheese to each tortilla as well
- Close the tortillas up, spray the tops and place into the air fryer
- Cook for about 6-8 minutes or until nice and golden brown and crispy
- Serve along a side of lettuce, tomatoes and cucumbers with the dressing
Crispy Beef and Bean Tacos
Equipment
- 1 Air fryer or oven
- Saute pan
- Can opener
Ingredients
CRISPY TACOS
- 1 small Onion Chopped fine
- 1 pound Ground beef 96/4
- 1 Cup fat free refried
- 1/4-1/3 Cup Kettle & Fire beef bone broth
- 2 tsp Dak's taco knight seasoning or taco seasoning
- 1/2 tsp Dak's Street Taco seasoning optional
- 1/2 tsp Trader Joe's elote seasoning optional
- Salt & pepper to taste
- 1 Cup fat free cheddar cheese
- 12 each Mission carb ultra-thin corn tortillas
SIDE SALAD
- 4 Cups Romaine 1 cup per person
- 1 Cup Mini cucumber, sliced 1/4 cup per person
- 1 Cup Grape tomatoes, halved 1/4 cup per person
- 4 TBSP Bolthouse cilantro avocado yogurt dressing or dressing of choice
- 4 TBSP Nonfat Greek yogurt
GARNISH
- Lime wedges to garnish
- Hot sauce optional
Instructions
- In a sauté pan first sauté the onions until translucent

- Season the beef with taco seasonings, salt and pepper. Cook until brown
- Add the beef broth as needed to keep it from burning and to add moisture back into the ground beef
- Add the refried beans and more broth if needed

- Take the ultra-thin corn tortillas and distribute the beef mixture evenly on one side of the tortillas
- Sprinkle an even amount of cheese to each tortilla as well
- Close the tortillas up, spray the top of the tortillas with cooking spray and place into the air fryer.
- Cook for about 6-8 minutes or until nice and golden brown and crispy.
- Serve with side salad and 2 TBSP per person for salad*DRESSING IS THE 4 TBSP BOLTHOUSE MIXED WITH THE YOGURT**
