The Best Chili

This chili is a family favorite all year round but even more popular in the colder months. It is kid friendly and amazing as leftovers or for those that love to meal prep.

One serving is 3 WW for 1 1/2 cups and this recipe serves 9.

It’s easy, delicious and super convenient for those that need a meal to set and forget.

When your 11-year-old asks you to make chili you know it’s a good recipe.

Here is what you will need:

  • Large pot or crockpot

  • Ground beef 96/4

  • Canned beans

  • Canned corn

  • Diced tomatoes

  • Tomato paste

  • Beef broth

  • Seasonings

  • Cilantro

  • Cheese

I like to use my Instant Pot, but you can also use a crockpot or large Dutch oven. HERE is the link to my Instant Pot and HERE is the link to my crockpot I use. 

I like using lean ground beef, but you can also use ground turkey or ground chicken for this as well. 

 

I usually get my all of my canned goods from Aldi since they are the cheapest. I love being able to add a bunch of canned goods to a meal, it makes it an easy meal.

Tomato paste give it a thick tomato base and great flavor.

 

Garlic powder and onion powder are seasonings that I ALWAYS have on hand.

Great seasonings for a chili and seasonings that I always have on hand as well. 

I love the seasonings from Dak’s Spices especially Street Taco and Taco Knight for my chili recipes. 

You can also just use a taco packet.

Salt and pepper to taste as always.

 

This is an optional addition but optional because of the spice.

Kraft fat free cheddar and cilantro are a must for my chili. I know a lot of people do not like cilantro, but it is a must in mine.

I like to eat my chili with a toasted light english muffin. I like to use some spray butter and garlic salt to jazz it up for only 2 WW.

Here is how to make it:

  1. In a pan or instant pot, brown the beef until cooked all the way through.
  2. Add the peppers (optional), beans, corn and tomato paste
  3. Stir until all combine
  4. Next add the beef broth and all of the spices
  5. Mix until all combine
  6. Season to taste with salt and pepper
  7. Set on low in the crockpot or instant pot for 4-6 hours
  8. Once ready to serve, season with salt and pepper to taste
  9. Garnish as you wish and enjoy!

Equipment

  • Instant pot or crockpot
  • Pan for sautéing ( If you do not have an Instant Pot )
  • Strainer
  • Knife
  • Dutch oven if you do not have a crockpot or Instant Pot

Ingredients

  • 2 Pounds Ground beef 96/4
  • 1 Bell pepper Chopped fine
  • 1 15.5 oz. can Pinto beans Drained & rinsed
  • 1 15.5 oz. can Black beans Drained & rinsed
  • 1 15.5 oz. can Northern beans Drained & rinsed
  • 2 15.25 oz. cans Corn ( No salt added ) Not drained
  • 2 14.5 oz. cans Diced tomatoes Not drained
  • 1 Can Rotel tomatoes Drained
  • 8 oz. Tomato paste in tube or can
  • 1 Cup Beef broth 1 tsp Beef bouillon with hot water mixed
  • 3 TBSP Dark chili powder
  • 1 TBSP Cocoa powder
  • 2 TBSP Dak's Nothin But Ranch seasoning or McCormick seasoning
  • 1 TBSP Onion powder
  • 1 TBSO Garlc powder
  • 2 tsp Oregano
  • 1 TBSP Cumin
  • 2 TBSO Dak's Taco Knight seasoning or Taco seasoning of your choice
  • Salt & Pepper to taste
  • 1/2 Cup Fresh cilantro Chopped
  • Cheese to garnish

Instructions

  • In a pan or Instant pot, brown beef until cooked all the way through. I use the saute setting on the instant pot.
  • Add the peppers, canned goods, tomato paste and stir.
  • Next add the beef broth , all of the spices and stir.
  • Season with salt & pepper to taste.
  • Set on low slow cooker setting for 4-6 hours.
  • Once ready to serve. Season with salt and pepper to taste again then toss in the fresh cilantro.
  • Garnish with cheese and serve with your choice of bread or corn bread.
