Blueberry White Chocolate Baked Oatmeal Bowl
The easiest, filling yet so satisfying oatmeal bowl.
Servings: 1
Equipment
- Ramekin or oven safe bowl
- Mini food processor or blender
Ingredients
OATMEAL BATTER
- 1/2 Cup Quick oats
- 1/2 Cup Frozen plain cauliflower rice
- 1/2 Cup Unsweetened almond milk
- 1 Banana
- 1 tsp Baking powder
- 1 Scoop Orgain Vanilla Bean Protein Powder
- Splash Vanilla extract
- 1 Pinch Kosher salt
- 1 Pinch Cinnamon or to taste
GARNISH/TOPPPINGS
- 1/2 Cup Blueberry Sauce Recipe linked in notes
- 28 Choc Zero No Sugar Added White Chocolate Chips or chips of your choice
- 1/2 tsp Coconut Sugar
- Sugar free pancake syrup or syrup of your choice
- More unsweetened almond milk to garnish, optional
Instructions
- Preheat oven to 400 degrees
- In a small food processor or blender add all of the oatmeal batter ingredients until smooth
- Pour into a lightly greased oven safe ramekin or bowl
- Place the blueberry sauce into the center of the oatmeal
- Sprinkle the chocolate chips all around then the coconut sugar
- Bake for 22 minutes
- Garnish with more almond milk & pancake syrup (Optional)
