Broccoli Caesar Salad

Taking the traditional Caesar salad and turning it into something amazing and different

I fell in love with this nontraditional Caesar salad. It was easy to make, and the flavors were incredible together. 

It was also a really great meal to meal prep for the week as well. Pair with an extra protein like chicken and you will have an even more filling and protein packed meal. 

Here is what you will need:

  • Broccoli
  • Canned chickpeas
  • Avocado oil spray
  • Dak’s Original Red seasoning
  • Dak’s Green Zest seasoning
  • Garlic salt
  • Onion powder
  • Fresh cracked black pepper
  • Bolthouse Caesar yogurt dressing
  • Nonfat Greek yogurt
  • Lemons
  • Caesar croutons
  • Grated parmesan cheese

Fresh broccoli crowns are all you need for this dish. I always try to look for when they are on sale.

Canned chickpeas you can find at any grocery store. I typically find all of my canned goods cheap at Aldi.

Bolthouse Farms is my favorite dressings to use. I like to add more nonfat Greek yogurt for it to go a longer way without changing the taste extremely.

I always have lemons and limes on hand in my refrigerator. They are great additives to so many things and add a splash of freshness.

Again, with another Aldi grab. Parmesan cheese can be very expensive, I’ve only found great quality and low price at Aldi.

 

Here is how to make it:

  1. Preheat the oven to 425 degrees
  2. On a sheet pan, place the broccoli cuts on one half of the sheet pan
  3. On the other half, place the drained & rinsed chickpeas
  4. Spray everything lightly with avocado oil
  5. Season everything with the Dak’s Original Red, Dak’s Green Zest, Garlic salt and black pepper
  6. Place into the oven for about 25-30 minutes
  7. Take it out, set aside to cool
  8. While it is cooling place the dressing, yogurt, lemon zest and lemon juice into a small bowl
  9. Once everything is cooled off, put into a large bowl
  10. Take the dressing and coat the broccoli and chickpeas
  11. Sprinkle the crushed croutons and parmesan cheese over the top 
  12. Enjoy!

Equipment

  • Oven
  • 1 Sheet pan
  • 1 Can opener
  • 1 Strainer

Ingredients

  • 1 large Broccoli head, raw cut into chunks (Bite size)
  • 1 Can Chickpeas drained & rinsed
  • Avocado oil
  • 1/8 tsp Dak's Green Zest or seasoning of choice
  • 1/8 tsp Dak's Original Red or seasoning of choice
  • 1/4 tsp Garlic salt
  • 1/4 tsp onion powder
  • Black pepper to taste

DRESSING

  • 2 TBSP Bolthouse Caesar yogurt dressing
  • 2 TBSP Nonfat Greek yogurt
  • Lemon zest
  • Splash Lemon juice

GARNISH

  • 2 TBSP Aldi Caesar croutons crushed
  • Parmesan cheese

Instructions

  • Preheat oven to 425 degrees
  • On a sheet pan place the drained and rinsed chickpeas on one half of the sheet pan and on the other half place the broccoli chunks
  • Spray everything lightly with avocado oil
  • Season with the spices and place into the oven for about 30 minutes
  • Take out of the oven and let cool
  • While cooling, prepare the dressing
  • In a small bowl combine the Bolthouse Caesar, yogurt, lemon zest and lemon juice
  • Once everything has cooled pour into a bowl
  • Add the dressing and coat well
  • Once coated sprinkle the crushed croutons and parmesan cheese on top to garnish
  • Enjoy
