My Easy Banana Oat Pancakes was a really random make one morning. I wanted to have a protein packed meal, but I also wanted pancakes. So, I decided to throw a few ingredients together that I always have on hand, and they came out great.

Equipment

  • Toaster
  • Pan

Ingredients

  • 1 Amylu Roasted Corn, Poblano peppers & cheddar cheese charbroiled chicken burger or patty of your choice
  • 1 Royo Sesame low carb bagel see notes for discount code
  • 1/3 Cup Liquid egg whites
  • Dak's Original Red seasoning see notes for discount code
  • Salt & Pepper to taste
  • 1 Borden Cheese fat free American cheese single or cheese of your choice

Instructions

  • In a medium sauté pan, brown up the fully cooked chicken patty
  • While chicken patty is getting browned, season your egg whites to your liking
  • Once chicken is browned on both sides, pull off and set aside
  • In the same pan, pour in your seasoned egg whites and cook all the way through on low temperature
  • Fold eggs over into a half moon, then place cheese on one side and fold over the eggs one more time
  • Place on your toasted or non-toasted bagel and enjoy

  • Oven safe bowl or ramekin
  • Mini food processor or blender

Ingredients

OATMEAL BATTER

  • 1/2 Cup Uncooked quick oats
  • 1/2 Cup Frozen cauliflower rice
  • 1/2 Cup Unsweetened almond milk
  • 1 Banana
  • 1 tsp Maple extract or vanilla extract
  • 1 Scoop Orgain Vanilla Bean protein powder
  • 1 tsp Baking powder
  • 1 1/2 tsp Cinnamon
  • 1 Pinch Nutmeg
  • 1 Pinch Kosher salt

GARNISH

  • 1 Banana Chopped or sliced
  • 1 tsp Coconut sugar
  • 1/2 TBSP Pure Raw Brands Honey Discount code in notes
  • Unsweetnened almond milk optional
  • Sugar free pancake syrup optional

Instructions

  • Preheat oven to 400 degrees
  • In a food processor or mini blender combine all of the oatmeal batter ingredients until smooth
  • Pour batter into a lightly greased oven safe bowl or ramekin
  • Take the chopped bananas and mix in half into the batter and top with the remaining
  • Sprinkle the coconut sugar on top and bake for 20-22 minutes. The longer you bake the more of a cake consistency
  • Drizzle honey on top once out of the oven and enjoy.
  • Add more unsweetened almond milk and sugar free syrup on top (optional)

My Roasted Garlic Yogurt Sauce took this to the next level combined with the roasted veggies and micro greens. Not to mention, the Eat Royo bagels are one of my FAVORITE low carb bagels on the market.

Ingredients

  • 1 Eat Royo Sesame Bagel or bagel of your choice
  • 2 Eggs
  • Salt & Pepper to taste
  • 1/2 tsp Dak's Nothin But Ranch or seasoning of your choice
  • 1/2 Cup Cooked & seasoned Broccoli
  • 1/2 Cup Cooked & Seasoned Zucchini/Yellow squash
  • 1/2 Cup FF Cheddar Cheese
  • 1/4 Cup My Roasted Garlic Yogurt Sauce Recipe on my blog
  • Micro Greens
  • Red pepper flakes optional

Instructions

  • First chop up veggies and place into a lightly grease pan. Sauté until warmed up (If leftover or cold)
  • Whisk eggs with seasonings and pour into pan. Cook on low heat. Low and slow
  • While eggs are cooking toast your bagel
  • Once bagel is toasted, place the roasted garlic sauce on both bagel halves
  • Just before the eggs are fully cooked, add cheese, Cover with a lid until melted, fold in half then cut in half to place on bagel and place micro greens on top of eggs. Enjoy!
