Pumpkin French Toast With Blueberry Sauce

My Pumpkin French toast recipe was a kid approved recipe! All three of our kids devoured this and asked for seconds.

Equipment

  • Pan

Ingredients

  • 3 Light bread slices I used 647 brand
  • 1/2 Cup Pumpkin puree not pumpkin pie mix, I used Libby's brand
  • 1/3 Cup Egg beaters
  • 1/4 Cup Almond milk
  • 1 tsp Vanilla
  • 1 tsp Pumpkin pie spice Dak's Spices brand
  • Pinch of salt
  • My Blueberry Sauce recipe on my blog
  • 2 TBSP Fat free Reddi Whip
  • Syrup of your choice I used sugar free

Instructions

  • In a bowl mix up the pumpkin puree, egg beaters, almond milk, vanilla, pumpkin pie spice and salt
  • Get your pan got with a light spray of either cooking spray, butter spray or avocado oil
  • Dip the bread into the batter quickly ( the light bread will break easily if you let it soak too long )
  • Place immediately onto your pan and brown on both sides
  • Serve immediately with some of my blueberry sauce and whipped cream on top. Add a little more pumpkin pie spice on top for a little extra spice and enjoy with your choice of syrup.

This breakfast was so delicious, filling and refreshing! I grabbed a bunch of veggies, my favorite veggie sausage patties and some fresh avocado and fresh herbs. I placed in all on my favorite flatbreads and this beauty came to life!
Not only did this take less than 10 minutes to put together, it was amazing!

Equipment

Ingredients

  • 1 Flatebread I use CutDaCarb
  • 2 Morning Star Veggie Sausage Patties
  • 1 Handful fresh spinach Chopped
  • 1/2 Cup Zucchini Shredded
  • 1/4 Cup Red onion Diced
  • 1/4 Cup Fat free cheddar cheese
  • 2 Eggs
  • 1/4 Cup Tomato Diced
  • 28 Grams Avocado Chopped
  • Fresh chives to garnish
  • Fresh basil to garnish
  • Salt & Pepper to taste

Instructions

  • Set oven to 350
  • Sauté the veggie sausage patty until crispy , chop up and set aside
  • In a pan, sauté the zucchini, red onion, spinach and season with salt and pepper then set aside
  • On a sheet pan place put parchment down and then the flatbread
  • Cook up the eggs, season with salt and pepper to taste then set aside
  • Time to assemble, Put the sautéed veggies, veggie sausage and eggs onto the flatbread
  • Sprinkle the cheese down and place into the oven just for a few minutes or until cheese is melted
  • Put the diced tomato , avocado and fresh herbs on the flatbread. Serve as is or roll up as a burrito and enjoy it that way.

I’ve mastered the Philly cheesesteak! This one is definitely my best one yet! If you need an easy and super delicious dinner look no further!

Once again, I made my Philly including toasting up the bread on my Steel Made flat top ( grab one in my Instagram bio ).

This Philly cheesesteak is made with the best London broil deli meat, ooey gooey American cheese, mozzarella , a little sweetness from roasted red peppers & sautéed onions with a tiny kick of heat from the pepperonchinis! This has it all! T

This delicious Philly Cheesesteak was done in less than 15 minutes! That’s what I call a win win in the busy mom life!

Recipe is for one:

INGREDIENTS:

• 1 Spinella’s Portuguese roll

• 6 oz. Dietz & Watson London Broil deli meat ( I ask the deli for thinly sliced almond shaved )

• Dak’s Spices Steakhouse seasoning

• 2 Shop Rite non fat American cheese slices

• 28g FF Kraft mozzarella cheese

• Sautéed roasted red peppers( sliced or chopped)

• Sliced onions

• Chopped pepperonchinis

• Salt & Pepper to taste

• Dill pickle mustard or mustard of your choice ( optional )

STEPS:

• In a pan or what I use ( Steel Made flat top, can find a link for that in my Instagram bio ) toast up the bun and set aside

• Sauté the roasted red peppers, onions and pepperonchinis until lightly golden and set aside

• Place the roast beef down, add the Dak’s steakhouse seasoning, roasted red peppers, onions and pepperonchinis until combine. Add the cheese and let melt or what I use is a cheese melting dome ( I use Cuisinart, I also have it linked in my Amazon store in my Instagram bio )

• Add everything to the roll and add your choice of condiments or leave as is.

• Enjoy!
