Chimichangas

Chimichangas

These are my chimichangas I made back in 2020 and shared on instagram before I had my blog.

I had to get them up on here and they are so delicious and pretty easy to make. 

Very low in WW points for the amount of food on the plate and keeps you full and satisfied. 

Entire plate is 6 WW points, 681 calories and has 84.8 grams of protein in it. You can certainly only have one of them and use less toppings for lower calories but I went big!

Here is what you need:

  • 98% fat free Ground chicken 
  • Taco seasoning, I use Dak’s Taco Knight seasoning
  • Chicken broth, I use Kettle & Fire chicken broth
  • Salt
  • Pepper
  • Fat free refried beans
  • Ole Xtreme wellness tortilla wraps
  • Steam in bag frozen cauliflower rice
  • Steam in bag frozen broccoli
  • Canned corn
  • Canned black beans
  • Garlic powder
  • Fresh lime
  • Cilantro
  • Con queso, I use Aldi brand
  • Borden fat free American cheese
  • Unsweetened almond milk
  • My Avocado crema, Recipe HERE & spicy one HERE
  • My Pico de Gallo, Recipe HERE
  • Hot pepper relish, optional
  • Cilantro
  • Non-fat Greek yogurt
  • Hidden Valley ranch seasoning

This brand is one I enjoy using and is closer to the real deal with less WW points and calories. 

I alwaya have the fat free cheddar cheese on hand as well as the fat free mozzarella. 

These are my Avocado Crema recipes. HERE is the spicy one and HERE is the Avocado Basil crema

 

 

 

Here is how to make it:

  1. Preheat your air fryer or oven to 400 degrees
  2. Place the ground chicken in a lightly greased pan and cook all the way through
  3. Add the taco seasoning, garlic powder and salt and pepper to taste
  4. Add the chicken broth to prevent drying out and or burning
  5. Add in the refried beans and mix until combine
  6. Cook the cauliflower rice and broccoli into the microwave according to the directions.
  7. Add 3/4 cup of the cauliflower rice to a bowl.
  8. Chop up the broccoli and add 3/4 of a cup of the broccoli to the cauliflower rice in the bowl.
  9. Add the 1/4 cup of beans and corn.
  10. Season with salt, pepper, garlic powder, lime juice and cilantro, set aside.
  11. Take the taco meat mix and divide into the two tortillas
  12. Sprinkle the cheese evenly between the tortillas, roll up and place into the air fryer until golden brown.
  13. While they are in the air fryer make the cheese sauce.
  14. Pour the cheese sauce over the chimichangas followed by any toppings and garnishes you’d like.

Equipment

  • 1 Air fryer oven

Ingredients

TACO MEAT

  • 1 pound Ground chicken or ground turkey
  • 1 TBSP Dak's Taco Knight seasoning or taco seasoning
  • Salt & pepper to taste
  • 1/2 tsp Garlic powder
  • 1 Can Fat free refried beans
  • 1/4 cup Kettle & Fire chicken bone broth

CAULIFLOWER RICE MIX

  • 3/4 Cup Frozen cauliflower rice
  • 3/4 Cup Frozen broccoli Chopped
  • 1/4 Cup Canned corn
  • 1/4 Cup Black beans
  • 1/2 tsp Garlic powder
  • 2 tsp Fresh lime juice
  • 1/3 Cup Cilantro Chopped
  • Salt & Pepper to taste

CHIMICHANGA & FILLINGS

  • 2 each Ole Xtreme wellness tortilla wraps
  • 5 ounces Taco meat
  • 1/2 Cup fat free cheddar cheese

CHEESE SAUCE

  • 1 1/2 TBSP Aldi con queso
  • 2 Slices Borden fat free American cheese
  • 1-2 TBSP Unsweetened almond milk

TOPPINGS

  • Avocado Cream Recipe HERE
  • My Pico de Gallo Recipe HERE
  • Hot pepper relish Optional

YOGURT MIXTURE

  • Nonfat Greek yogurt
  • Hidden Valley dry ranch seasoning to taste
  • Dak's Street Taco or taco seasoning, to taste

GARNISH

  • Cilantro

Instructions

YOGURT MIXTURE

  • Combine the nonfat Greek yogurt, ranch seasoning and taco seasoning to taste.
  • Place into fridge until ready to use.

TACO MEAT

  • Preheat air fryer or oven to 400 degrees.
  • Spray saute pan lightly with avocado oil.
  • Add the ground turkey or ground chicken to the pan.
  • Season the meat with the taco seasoning.
  • Season to taste with salt and pepper.
  • Add the chicken broth to prevent from drying out and burning.
  • Add the refriend beans and mix until incorporated.

CAULIFLOWER RICE MIX

  • Place the frozen steam in bag cauliflower rice in the microwave.
  • Once cooled enough, squeeze the water out and place 1 cup into a bowl.
  • Place the broccoli steam in bag in the microwave.
  • Take the broccoli and chop super fine then add 1 cup to a bowl.
  • Add the corn, black beans, garlic powder, lime juice and cilantro.
  • Season to taste with salt and pepper.

CHEESE SAUCE

  • In a microwave safe dish combine cheese sauce ingredients.
  • Place in the microwave for 15 second increments until nice and smooth and able to drizzle.

CHIMICHANGAS & FILLING

  • Divide 5 ounces of the taco meat between the two tortillas.
  • Evenly distribute the cheddar cheese between the two tortillas.
  • Roll up and place into the air fryer or oven until golden brown. About 8 minutes.
  • Once golden brown, place the cauliflower rice mix into a shallow bowl or plate.
  • Place the chimichangas on top of the rice mixture.
  • Drizzle the cheese sauce all over the chimichangas.
  • Top with the toppings and yogurt mix.
  • Garnish with cilantro and enjoy.
