When it comes to breakfast, I love a quick yet filling one.

My Breakfast Burrito with Potatoes, Sausage & Broccoli is packed full of protein and veggies keeping you full for hours.

If you want to prep ahead and freeze you can also do that so when it comes to a quick grab and go meal for the morning you will be all set. Place into the microwave then into the oven or air fryer to crisp up.

Equipment

  • Saute pan
  • Air fryer or oven

Ingredients

  • 1 each Joseph Lavash Flatbread
  • Avocado oill spray to coat pan
  • Ore-Ida Potatoes O'Brien
  • Dak's Nothin But Ranch seasoning or ranch seasoning of your choice
  • Salt & Pepper to taste
  • 50 grams Jimmy Dean Turkey Sausage Crumbles
  • 1/2 Cup Cooked broccoli chopped
  • 2-3 Eggs soft scramble
  • fresh chives
  • 2 Borden fat free American cheese slices
  • Cooking spray to air fry burrito

Instructions

  • In a saut√© pan spray avocado oil to coat pan
  • Place frozen potatoes, turkey sausage crumbles and chopped broccoli until hot and golden brown
  • Season everything with nothin but ranch seasoning, salt and pepper to taste
  • Either while potatoes, sausage and broccoli are cooking cook eggs separate or take out and cook eggs afterwards.
  • Cook eggs to a soft scramble and add the fresh chives
  • In the flatbread, place the ingredients in the center, add the cheese and start to roll up. *HEAD TO THE TOP OF RECIPE OR MY INSTAGRAM FOR A HOW-TO VIDEO*
  • Once rolled up, Spray air fryer basket with cooking spray and burrito once rolled up.
  • Air fry at 360-380 until golden brown

  • Saute pan
  • Spatula

Ingredients

  • 2 Slices Light rye Stop & Shop brand
  • 2 Eggland's Best Eggs
  • Salt & Pepper to taste
  • 2 Jones Dairy chicken sausages chopped
  • 2 TBSP Jalapenos Jarred, I used Mt. Olive brand
  • Scallions Chopped
  • 2 Borden non fat american cheese slices
  • Sliced tomatoes
  • I Can't Believe It's Not Butter Spray
  • Dak's Everything But-Tha Salt seasoning

Instructions

  • In a saute pan, spray lightly with either cooking spray or avocado oil.
  • Scramble up the eggs in a bowl, season with salt and pepper
  • Pour right into the pan
  • Sprinkle the chopped chicken sausage, diced jalapenos and scallions over the eggs
  • Place the two slices of bread over the eggs, while they are still wet. Place them down to when they are flipped its folded the right way.
  • Once the bread is stuck to the eggs, flip everything over.
  • Put the cheese and tomato on the eggs then fold the eggs that are hanging over the edges into the sandwich.
  • Fold over the bread to make a sandwich. Spray both sides with the spray butter and sprinkle the dak's. Brown both sides and enjoy

One of my many favorite breakfast creations! I seriously enjoy breakfast the most! You can have it for breakfast, lunch or dinner!
This is packed full of many forms of goodies! From the local bakery roll, protein from the eggs, lots of veggies from the sausage patties and the delicious avocado giving that healthy fat and creaminess!
I topped everything with the delicious Dak's seasonings!

  • 1 Spinella's Portuguese Roll I find mine at Shop Rite
  • 2 Slices non fat american cheese Shop RIte brand
  • 2 Eggland's Best eggs
  • 2 Morning Star Veggie Sausage Patties
  • 28 Grams Avocado
  • Dak's Seasonings, Nothin But-Tha Salt CODE:CHEFALLIE10 for 10% off
  • Salt & Pepper to taste

Instructions

  • First I microwaved the frozen veggie sausage patties to get the cooking process along faster. Once done I placed on my flat top to get both sides nice and crisp. I use my Steel Made flat top. You can grab one of these from my homepage under codes & links.
  • I toasted my roll while veggie sausage was browning , then set aside as well.
  • When ready, cook the eggs to your liking. Season with salt and pepper to taste
  • When time to assemble sandwich, I placed the cheese down, then the hot eggs, sausage patties and fresh sliced avocado. Make sure to sprinkle a little salt on the avocado. I then seasoned with Dak's and enjoyed!
