Spicy Peanut Butter Shrimp with Veggies

Equipment

  • Air fryer or oven
  • Sheet pan
  • Microwave

Ingredients

  • 1 Pound Shrimp Raw
  • Salt and peper to taste
  • 1 tsp Dak's Asian Zing
  • 1 1/2 TBSP Cornstarch
  • 2 Cups Steam N Bag Broccoli
  • 2 Cups Tatooed Chef cauliflower stir fry or plain cauliflower rice
  • Scallions to garnish

SAUCE

  • 1/2 Cup G Hughes Sweet Chili SF sauce
  • 2 TBSP PB Fit peanut butter powder
  • Splash Lime juice fresh

GARNISH

  • Cilantro or parsley to garnish
  • Sesame seeds to garnish

Instructions

  • Preheat air fryer to 390 degrees
  • While preheating the air fryer, place steam in bag broccoli into the microwave according to package directions
  • Either microwave cauliflower rice per directions on package or place into a small sauce pan and brown up
  • Place the shrimp onto a plate or sheet pan
  • Spray the shrimp with avocado oil then season with salt, pepper and Dak's Asian Zing seasoning or seasoning of choice.
  • Once done seasoning, sprinkle the corn starch all over the shrimp and let it sit for a few minutes
  • Once the air fryer is to temperature, spray both sides with cooking spray and place into the air fryer for 4-5 minutes
  • While shrimp is cooking place the chili sauce, peanut butter powder and lime juice into bowl and mix until combine
  • Once shrimp is cooked, toss into the chili sauce and serve with broccoil and cauliflower rice
  • Garnish with scallions, parsley and sesame seeds

Cheesy Broccoli & Cajun Shrimp Spaghetti Squash

This is my kind of meal. I absolutely love spaghetti squash, no guilt with all the feel of a pasta dish. I also love shrimp and I tend to enjoy it without my husband around since he doesn’t eat seafood, so this was all for me!

Very minimal work for this amazing dish and forget about pots and pans, this is mostly done in the oven and some in the microwave. YES YES & YES!

Cheesy Broccoli & Cajun Shrimp Spaghetti Squash

Equipment

  • Sheet pan

Ingredients

  • 1 Spaghetti Squash I used half of a large squash
  • Avocado oil spray to coat squash & shrimp
  • Salt & Pepper to taste on squash & shrimp
  • 6-8 Garlic cloves In or out of the bulb
  • Dak's Cajun Voodoo to taste or cajun seasoning of your choice
  • 6 oz Uncooked shrimp Deveined & Shelled
  • 1 Cup Cooked broccoli I used frozen steam in bag
  • 2 Light laughing cow wedges
  • 1/4 Cup FF Mozzarella cheese

Instructions

  • Set oven to 425
  • Slice spaghetti squash in half (length wise)
  • Spray squash with avocado oil and season with salt, pepper and cajun seasoning to taste. Place squash on sheet pan (cut side down)
  • Place garlic cloves or bulb (if using a bulb slice top off) place in foil and place onto sheet pan with squash.
  • Bake for 30-40 minutes or until squash and garlic are tender.
  • While squash is cooking. Get the broccoli cooked and set aside.
  • !5 minutes before squash is done, place cleaned and seasoned shrimp onto a small sheet pan and cook for 10-12 minutes.
  • Once everything is done cooking, take a fork to the squash to make "Spaghetti" strands, smear garlic & laughing cow wedges into the squash until well combined. Mix in the broccoli and shrimp. Place mozzarella on top and back into the oven until cheese is melted and enjoy.

Growing up one of my favorite meals or snack was a toasted english muffin with butter and tuna on top!

Now I’ve upgraded to a more adult version with crab, avocado, tomato, melted cheese and even a side of eggs that I put right on top with some crispy bacon!

I used my leftover crab roll mix , that recipe can be found on my blog as well as this easy and delicious one!

INGREDIENTS:

• 1 Serving of my Crab Roll mixture, recipe on blog

• 1 Light english muffin

• Tomato slices

• 28g Avocado

• 28g FF Kraft Mozzarella cheese

• 2 Slices Oscar Mayer center cut bacon, cooked and chopped

• Chives & Lemons to garnish

• Side of eggs

STEPS:

• Toast your English muffin, Place avocado down, then tomato, add the crab roll mix, then the cheese. Place into a 350 oven for about 5-7 minutes then switch to low broil to melt cheese

• Garnish with bacon, chives and a squeeze of lemon

• Serve with a side of eggs like I did
